Birria, a meat stew that’s often prepared for special occasions, uses a marinade of vinegar, oregano, and spices, but the beauty of this recipe is that you can throw it all in a slow cooker with some beef consomme and let the flavors meld for hours. Top with the beef and season with the chili powder, oregano, salt and pepper. Lock the lid and pressure cook for 45 minutes. Let stand for 15 minutes, then carefully release any remaining steam. Place the beef into a saucepot and season with the chili powder, oregano, salt and pepper. Add the garlic, onion, bay leaf, vinegar, consomme and 1 cup water to the pot.

Heat over medium-high heat to a boil. Cover and cook for 2 to 3 hours or until the beef is fork-tender. Proceed with the rest of the recipe as shown, starting with Step 3. Place the beef into a 6-quart slow cooker and season with the chili powder, oregano, salt and pepper. 2 cups onion, bay leaf, vinegar and consomme.
